About the project
EVA Baku is a modern Greek taverna in Baku, built around Mediterranean cuisine, open-fire cooking, and vibrant, high-quality ingredients. At the heart of the project is a large open kitchen, wood-fired ovens, and grills, which have become an integral part of not only the restaurant’s culinary techniques but also its atmosphere. This large-scale project can accommodate approximately 300 guests.

What was done:
- 01A conceptual menu featuring modern Greek cuisine has been developed.
- 02An open kitchen with wood-burning stoves and grilling areas was designed and built.
- 03Operational processes have been optimized to accommodate the restaurant's scale and high volume.
- 04The project team has been formed and trained.
- 05Key local and international suppliers have been identified, and the restaurant's product portfolio has been established.
- 06A full-scale gastronomic launch of the project was carried out, followed by ongoing operational support.
