About the project
The project combined Uzbekistan's traditional cuisine with a modern restaurant concept and served as the foundation for the development of a chain of three restaurants.
Project delivery
For 5–6 years, I managed the project’s culinary direction as brand chef: developing the concept and cuisine, creating and updating menus, designing culinary processes, and building and developing the team. As part of brand development, I launched new restaurants in the chain, led culinary expeditions to Uzbekistan, and studied local ingredients, techniques, and traditions, subsequently adapting them to a modern restaurant format.
