About the project

“Riba-Pila” is a seafood restaurant whose concept revolves around Black Sea fish and the traditions of Odessa cuisine. At the heart of the concept are simple, recognizable ingredients and familiar dishes reimagined with a modern twist: fried crucian carp, fish soup, pike, fish cutlets, and other dishes made with local fish.

Project delivery

What was done:

1. 01A concept for a seafood restaurant was developed and implemented.
2. 02A conceptual menu has been created that focuses primarily on Black Sea fish and Odessa’s culinary identity.
3. 03An open kitchen was designed and built.
4. 04The technical specifications for the kitchen have been developed, and professional equipment has been selected.
5. 05A team has been formed and trained.
6. 06A search for and selection of strategic suppliers of fish and key products was conducted.
7. 07Standards have been developed for the product, preparation, and serving of dishes.
8. 08Comprehensive preparations were made to get the restaurant ready for its opening.
