About the project

Suelo Paris is a contemporary Spanish restaurant in Paris, whose concept is based on high-quality ingredients and the cuisine of various regions of Spain. At the heart of the concept is dry-aged meat from northern Spain, wild-caught fish, and premium seafood: langoustines, carabiners, turbot, sea urchins, as well as traditional paellas. The project’s Spanish gastronomic identity has been adapted for a Parisian audience while preserving the character and quality of the original ingredients.

Project delivery

What was done:

1. 01A conceptual menu featuring Spanish cuisine was developed and adapted for the Parisian market.
2. 02The project's signature dishes and conceptual presentations have been developed.
3. 03An international team of Spanish and French experts has been formed.
4. 04We have established partnerships with key suppliers from Spain - ranging from dry-aged meat to fresh fish and premium seafood.
5. 05The restaurant's menu has been developed with an emphasis on authentic Spanish ingredients and seasonal produce.
6. 06A culinary launch event for the project was held in Paris.
