Ryba Pila

About the project

“Riba-Pila” is a Kyiv-based seafood restaurant whose concept revolves around Black Sea fish and the traditions of Odesa cuisine. At the heart of the concept are simple, recognizable ingredients and familiar dishes given a modern twist: fried crucian carp, fish soup, pike, fish cutlets, and other dishes made with local fish. The project has received widespread recognition and has been honored with a number of restaurant awards.

Project delivery

What was done:

1. 01A concept for a seafood-only restaurant was developed and implemented.
2. 02A conceptual menu has been created with a focus on Black Sea fish and Odessa’s culinary identity.
3. 03An open kitchen was designed and built.
4. 04The kitchen's technical design has been developed, and professional equipment has been selected.
5. 05A team has been formed and trained.
6. 06A search for and selection of strategic suppliers of fish and key products was conducted.
7. 07Standards for products, food preparation, and food presentation have been developed.
8. 08Comprehensive preparations were made to get the restaurant ready for its opening.
